Originally published in the River Cottage Meat Book, three poster sized versions of ‘cow’, ‘lamb’ and ‘pig’ prints are now available. Each gives a comprehensive guide to the various cuts your can get from cows, pigs and sheep.

I wonder how many people have enough space on a kitchen wall to hang them; are not most walls covered with cupboards?
These are great - my grandfather’s butcher’s shop was full of these things - classic designs. So evocative of a dying art…
I think they’re great and have mentioned them on my kitchen design blog as being just the thing for a big kitchen with an unfitted style - where there is likely to be enough wall space.
I am Head of Technology at Felpham Community College, Bognor Regis, West Sussex and we are particularly concerned at the lack of understanding of the meat industry by students aged between 12 and 16. We are particularly interested in acquiring posters and leaflets which show ‘exploded’ diagrams of cows/cuts of beef etc and would be grateful for any information which would enhance our school display boards.
Unfortunately our budget for these items is rather limited and wondered if there was a special rate for schools?


you know i always go to my butcher with my austrian cookbook which has drawings exactly like these. otherwise i could never get those austrian cuts to order! other customers present usually laugh, but he loves the fact that i take my meat so seriously! A2 is a bit too big to take along, though
