Hey Andrew – happy to help with the Polish equivalent – I have recently purchased a truly comprehensive Encyclopaedia of Polish Cuisine by Hanna Szymanderska. It covers a whoping 2400 recipes and is now available in English. It is not available on amazon, but can be purchased for example from here:
