The Inverawe Smoked Fish CookbookRosie Campbell-Preston, the owner of Inverawe Smokehouses in Scotland, has created a mouth-watering smoked fish cookbook for foodie fans to make the most out of gourmet ingredients.

The Inverawe Smoked Fish Cookbook, published by Quiller, will be available at the end of the month.

The book contains recipes for every occasion, including canapés and picnics, devised by Inverawe’s owner Rosie and her development team.

“The recipes create innovative meals that will inspire you to try something new in the kitchen. The cookbook encourages the use of smoked fish in creative ways, such as escabeche of kipper fillets – Rosie’s take on traditional Spanish marinated fish – creating truly unique tastes that bring a new dimension to this type of cooking.

Classic recipes such as Inverawe fishcakes make an appearance alongside more adventurous dishes such as smoked eel, chorizo and potato frittata, with colourful pictures to illustrate each. A wide variety of Inverawe’s delicious smoked fish is used including kippers, trout, halibut, gravadlax, and mackerel.”

Rosie said: “Customers and visitors to the Inverawe shop often ask about the best ways to serve different types of smoked fish, such as trout and eel. We had a few recipe ideas that I have served for the family so we decided to create a book in order that customers can experience the quality of Inverawe’s smoked fish in a variety of ways.

“The recipe book provides a diverse selection of ideas for customers to adapt depending on what types of fish they like. Each recipe has been tried by family or friends and have proved popular so we hope the cookbook will encourage more people to be adventurous when cooking with smoked fish.”

Inverawe Smokehouses has been smoking fish on the banks of Loch Awe for over 30 years. Each piece of fish is smoked in traditional brick kilns over a period of 24-48 hours allowing each piece to take up the unique aroma and texture that Inverawe is so well known.
