What’s So Great About Kale?
Kale - that green crinkly stuff that tastes ‘orrid - is enjoying a huge increase in sales. At least in Waitrose it is, where an increase of 122 per cent has been reported as consumers keep on grabbing the nutrient packed ‘super-foods’.
Kale is a good natural source of folic acid, which is important in the early stages of pregnancy. It is also a good source of lutein, a carotenoid with powerful antioxidant properties, important for maintaining healthy vision. Kale is also a good source of fiber, antioxidants vitamins A and C, and the energy releasing B vitamins and is also rich in phytonutrients that are thought to help in the fight against some cancers.
I had a salad during the summer at Pizza Express (I know, I know, a bad idea to start with) that was full of the hardest, sharpest, throat cutting kale I have ever had the misfortune to attempt to eat.

I really don’t know what’s so good about it. It sat in our fridge for a week (after coming in our vegie box) until it turned yellow. We thought about sauteeing it… but it’s not a very inspirational vegatable.
