Billingsgate Fish Market Cookbook

billinsgate market cookbookBillingsgate is the UK’s largest and most famous inland fish market, offering buyers the opportunity to see the widest selection of fish in the United Kingdom. This London institution is steeped in history and tradition, and its origins can be traced back to 1327 when Edward III granted London’s citizens a charter concerning the market rights of the City of London. Today Billingsgate Market is based in London’s Docklands where, at 5 a.m. every Monday to Saturday, a bell is tolled and London’s “free and open market for all sorts of fish whatsoever” opens for business.

C.J. Jackson, Director of Billingsgate Seafood Training School, provides invaluable advice on selecting fish, sustainability, techniques for fish preparation and over 80 delicious recipes ranging from Fish in Beer Batter to Lemon Sole Gratin.

This unique and exciting book celebrates the fascinating history of the market and explores market life today. The Billingsgate Market Cookbook is essential reading for anyone with a love of cooking and an interest in the history of one of London’s greatest markets.

Recipes include Goan Style Seafood curry, Whiting Armandine, Grilled Halibut with Gemolata Gruyere Crumb, Seared Scallops and Bacon Omelette, Steamed Cockles with Greek Yoghurt and Capers and the Fish Pie Recipe as detailed in full on SpittoonExtra.

The Billingsgate Market Cookbook is available from Amazon.co.uk for an amazingly excellent price - just £6.60.

The End of the Line

end_of_the_lineWaitrose is seeking to raise awareness of the need for consumers to seek out sustainable fish by supporting the launch of the year’s most important environmental film.

Described as the “Inconvenient Truth of the Oceans”, The End of the Line (launching 8th June in selected UK cinemas nationwide) reveals the devastating truth about what is happening in our oceans and predicts that if overfishing continues, there will be no more seafood by 2048.

A recent survey of 2,000 UK adults - commissioned by Waitrose - reveals widespread lack of knowledge around this issue:

  • 78% of people admit they don’t try to buy fish from a sustainable source
  • 72% are unaware that some fish are as close to extinction as the white rhino
  • But 70% are more likely to make sustainable choices when given the facts

Support from Waitrose for the film’s UK release follows a long-term commitment by the retailer to drive sustainability.

Waitrose has a totally transparent supply chain and buys all its own label fish from sustainable sources – from the fresh fish at the fish counters to the frozen fish fingers in the freezer aisle. Since launching its responsible fishing policy 12 years ago, Waitrose has been taking wide-scale steps, ensuring all its fish are caught using responsible methods. This includes a complete ban on many species under threat, and on damaging fishing methods such as beam trawling.

Waitrose want to raise awareness so that consumers ask where their fish has come from where ever they shop or eat fish.

Bring Back Fish on a Friday!

Sea Bass How many times a week do you eat fish?

The Food Standards Agency recommends that we should all eat at least two portions every week, one of which should be oily. Not only is fish a rich source of protein, vitamins, minerals and essential fatty acids, but it is extensive in variety - so there is a fish out there to suit every taste bud and occasion. However, it seems only a quarter of us are meeting this quota.

So why is this? Perhaps one reason is the dying tradition of eating fish on a Friday, with only 5% of us now still sitting down to a fish based meal at the end of the week.

To support the launch of their Simply Baked to Perfection range, Birds Eye took a closer look at our fish-eating habits, with their research finding that one in four people say they would rather not cook fish as they think it is too expensive. Nearly one in five people think fish is too smelly, while just under a quarter either don’t know how to prepare fish or simply don’t like handling it.

Whatever your excuse is, the facts are there - fish should be an important part of everyone’s diet. So whether you are new to preparing fish, aren’t sure what to do with it, or just don’t have the time to try, take a look at this video.

Aldo Zilli, one of the nation’s favourite fish chefs, takes us to Billingsgate Market via this little video feature where he gives us some of his top tips and introduces us to a few friends on the way. His main aim? To show the great British public that fish needn’t be complicated and encourage them to start eating more fish as part of a healthy balanced diet - especially on a Friday!
